ZESTY VEGGIE CHILI
1 can of Green Giant Mexicorn
1 small can of tomato paste
1 – 16 oz. can of black beans
1 – 16 oz. can of kidney or pinto beans (pintos are meatier)
2 tea. Chili powder
1- 16-oz. jar of chunky salsa
Stir all ingredients together (undrained) in a large saucepan over medium heat until heated through .Done. Don’t forget the shredded cheddar cheese or sour cream. Add corn muffins made ahead simply from an inexpensive mix.
By the way Lenten To Go’s like Grilled Cheese sandwiches and Tuna Salad don’t have to be one note bores.
– Marbled rye bread or raisin bread can lift grilled cheese to new heights.
– Use different cheeses like Havarti, Gruyere, or Brie. Thinly-sliced crisp apples
Pair well with these cheeses or most others as well.
– Roasted red peppers, onions, or sliced tomato with chopped herbs give a tasty
And nutritious boost.
– Go bolder with spicy or grainy mustard / mayonnaise combos.
Try a Cajun Tuna salad between any kind of bread slices, or served over salad greens for a satisfying meal. Adding a chopped seeded tomato and some Tabasco sauce to a mayo-based tuna salad will nudge it south-of-the-border in a quick twist. A basic tuna salad transforms also with chopped mild cheeses and apples served on a Kaiser roll with a simple soup.
